Five delightfully sweet treats for your Easter feast
For many, Easter is one of the sweetest times of the year. From freshly hot cross buns to two tone chocolate bunnies, there’s a treat to tempt every sweet tooth. Want to make some sweet treats for your Easter table this year? We’ve got some great ideas!
Here are five sweet treats sure to be the highlight of your Easter feast
1. Sweet chick nests
For 12 nests, you’ll need 2 cups of mini marshmallows, 1/4 cup butter, 4 cups chow mein noodles, and speckled jelly eggs for filling the nests. Grease a muffin pan. In a large, microwave-safe bowl, melt the butter. Add the marshmallows, stir, and microwave 45 seconds on full power. Stir again and microwave an additional 45 seconds. Add noodles and coat them with mixture. Spoon noodles into pan; use your hands to form little nests. Put the pan in freezer for an hour. Pop out each nest using a knife. Place on a lightly buttered serving platter lined with parchment paper so nests won't stick. Fill with candy. Enjoy!
2. Bunny cupcakes
We love cake and these are oh so simple to make and yet right on theme. Bake a batch of vanilla or chocolate cupcakes and allow them to cool. Make bunny ears for the top of each cupcake by cutting large marshmallows in half diagonally and dipping the cut side into some pink sugar sprinkles. Options for icing your cupcakes include – pipe on white icing with a grass tip to give you a fluffy look OR sprinkle white icing with coconut OR simply use a knife to smooth on the icing. Stick a pair of ears on top of each cupcake and you’re ready to hop!
3. Peanut butter eggs
You’ll need 1 cup chunky peanut butter, 1/4 cup butter, 1 teaspoon vanilla, 1.5 cups powdered sugar, 110 grams semi-sweet chocolate, sprinkles for garnish. In a large bowl, melt peanut butter and butter together. Stir in vanilla and powdered sugar. Mixture will seem dry but should hold together when you form it into egg shapes. Using an ice cream scoop, measure out 10 even mounds. Form each mound into an egg shape. Refrigerate for 10 minutes. Melt chocolate in microwave on low heat, stirring every 30 seconds. Dip each egg into chocolate to cover completely. Remove egg with fork, and tap along the edge of the bowl, allowing excess chocolate to drip back into the bowl. Place onto parchment paper and sprinkle with any desired toppings. Repeat until all eggs are covered. Refrigerate for 5 minutes until chocolate has hardened. Serve.
4. Plate it up
Why settle for just one Easter treat when you can have your pick? Put together an Easter treat platter for the centre of your table and let your guests pick and choose their treats. Use a beautiful serving plate or cake stand and fill it with mini hot cross buns, brownie squares, chocolate eggs, chocolate dipped strawberries, caramel popcorn, lemon cookies, macaroons... the list goes on and on.
5. Coffee with a twist
One of this year’s Easter catering trends is hot coffee served in a chocolate egg! Sounds a bit crazy but why not carry the Easter egg theme right through to the end of your meal? Use good quality, thick but hollow chocolate eggs. Slice off the top of the egg, place the egg in a coffee cup, pour in the coffee and enjoy. Rich chocolate and creamy coffee. Simply yum.
